Many of you have known that I'm a HUGE fan of Ramsey. Especially his channel 4 cook-along from London to his ultimate cookery courses, I can't get enough of his instructional series.
But this isn't about Gordon Ramsey, it's about someone else.
The man crush I have now in the chef world is a guy named David Chang. (haha yes the name was important).
I started watching "mind of a chef" on netflix. David Chang is the head of Momofuku and he uses Allen Benton's Bacon ends for his ramen base.

In the majority of his episodes, He mentions Benton's bacon quite a bit and he says something along the lines of, "You haven't had Bacon until you had, Allen Benton's bacon."
I had to know more.

A quick youtube search showed Top Chef, Kevin Gillepsie visiting Allan Benton at his bacon farm.
To understand how different this is from conventional bacon, discovery channel did a video on how regular bacon is made.
Now I'm interested in in Benton's Bacon. We all know that ingredient is key and the source of the ingredient is paramount. Allen Benton must be the king of bacon from what these guys are saying.
One night in my drunken stupor I decided to order Benton's bacon so I too can experience bacon.
So thus starts project bacon from me.
In the next 6 weeks it takes for the order to fill and get to me, I'll be exploring what I can do this is bacon, revisiting what I know about bacon, and asking for people for their recipes and how bacon has touched them.
Hopefully at the end I'll have a golly old party or something.
With all the ideas and stuff going on. I'm already considering ordering more of Allan Benton's bacon.
David
